Yes, you can eat dandelions! Who knew?!

Here’s a quick, fun, easy for little hands to do recipe that makes some pretty yummy biscuits.

What you need (to make approx. 20 biscuits)

125g butter

100g caster sugar

180g plain flour

20g cornflour

1 egg

1 lemon (zest & juice)

1/4 tsp baking powder

Pinch of salt

What to do

Step 1 - Pick the dandelions (you need around 20-30)

Step 2 - Wash dandelions and remove stems, then pick all the petals off (be careful to only get the yellow bits, as the green bits have a bitter taste)

We forgot to wash our (oops!) but H said ‘It doesn’t matter, they’ll taste better like this’ 😂

Step 3 - Grease baking tray

Step 4 - Cream the butter & sugar together (prob need an adult to do this bit)

Step 5 - Beat in the egg & lemon zest (we used a fork for this which H loved)

Step 6 - Sieve the dry ingredients into a bowl & mix well

Step 7 - Add lemon juice & dandelion petals & mix

Step 8 - Spoon the mixture into little circles on the baking tray

Step 9 - Bake at 180c for 15-20 mins until golden brown (we took ours out after 18mins while they were still quite soft in the middle as we didn’t want them too crunchy)

Step 10 - Enjoy 😋

Hope you have as much fun as we did x
